Bacon & Chive Yogurt Dip

Bacon and Chive Yogurt DipI recently ate a scrumptious but rather unhealthy Roasted Garlic and Bacon Dip. The base of this dip was mayonnaise and hence the fat content was off the charts. My father recommended that I test making something similar with hung yogurt.

Yogurt dips are a wonderful light and figure-friendly appetizer for the warmer summer months. Since yogurt is so versatile there’s a multitude of yogurt dip recipes available. Despite yogurt being the common denominator you can always find a way to switch things up by playing around with the additional flavor elements.

This recipe eliminates the mayonnaise to reduce an overabundance of fat. I also use a lower fat cut of bacon. The bacon specks running Bacon & Chive Dipthroughout the dip provide a fantastic smokiness and textural crunch. The chives add an aromatic and visual brightness that’s imperative in any brilliant summer appetizer. I use just a hint of roasted garlic to let the main stars of this yogurt dip – the bacon and the chives shine bright. 

This healthy and delectable appetizer can be whipped up effortlessly to satiate your snack hankerings and even those of a discerning crowd.

Bacon and Chive Yogurt Dip Recipe
Time: Active: 20 minutes Inactive: 1 hour
Yield: 1 cup

Ingredients:
1 cup wholemilk plain yogurt, hung to remove excess water (See note)
2 tablespoons chives, finely chopped
2 tablespoons bacon + 1 teaspoon, cooked and finely chopped (See note)
¾ tablespoon roasted garlic (See note)
Salt and pepper to taste

Note:

  • Hung Yogurt/Hung curd: Take the 1 cup of full fat plain yogurt and tie it up in a cheese or muslin cloth. Suspend this cloth over a small container for 30-45 minutes, to remove most of the excess water.
  • For this recipe preferably pick a lower fat cut of bacon like middle or back cut.
  • If you are unsure how to roast garlic here is an easy technique: http://americanfood.about.com/od/appetizersandsoups/r/roasted-garlic.htm . Since you only need a little for this recipe but may roast half a pod the remainder can be mixed into cream cheese to make a delicious spread for toast.
  • This recipe can easily be doubled, tripled, quadrupled etc. for a large group.

Method:
1) Cook the bacon and remove all excess fat on a plate lined with kitchen towels. Then finely chop and set aside 2 tablespoons + 1 teaspoon of it. (Any extra bacon is always a special treat for the chef! )
2) In a small bowl combine the yogurt, chives, 2 tablespoons of chopped bacon and roasted garlic. Season this with salt and pepper to taste. Garnish with the remaining 1 teaspoon of chopped bacon. Do ahead: This can be made 12 hours before you are ready to serve. Just store it in an air-tight container in the refrigerator.
3) Serve with toasts points, crusty bread, pita chips or any dipper of your choice.

    Looks like a delicious dip. I’ll keep this one handy, we do love making our own dips with yogurt. My son will love this one since it includes bacon! 🙂
